Pineapple Apricot Muffins
Ingredients
- 1 pkt. Advanced Vanilla Pudding
- 1 pkt. Advanced Vanilla Beverage
- 2 pkt. Advanced Pineapple Apricot Drink
- 4 tsp. baking powder
- 1/2 tsp. coconut extract
- 1/2 tsp. rum extract
- 1/2 tsp. butter flavoring/extract
- water (approx. 1 cup)
Directions
- Preheat oven to 350º F.
- Mix together all dry ingredients.
- While whipping with a wire whisk, add flavorings and enough water until consistency of cake batter.
- Spoon mixture into a mini-muffin tin sprayed with vegetable oil spray.
- Bake 5 1/2-6 minutes.
- Makes 4 servings.
- Suggestion: Freeze extra servings in individual freezer bags to defrost fresh when you’re on-the-go.
