Low Carb Soup Recipe

Soup! Roasted Red Pepper and Smoked Gouda to be exact. Hear me out…. I know most of us are on the brink of summer, but I am a soup person year-round. Today in my part of the world (Illinois), we are having a beautiful spring-like day. The air conditioner is off and we have a gentle breeze coming in. This soup is on the menu for dinner tonight! Smells amazing.
A few years ago, I had this soup at a local coffee/sandwich shop and was determined to recreate it. Luckily, I didn’t have to. I found the recipe on peaceloveandlowcarb.com. I am always on the look out for new recipes that I can make ahead in the Crockpot but still fit the bill of low carb and be full of flavor. This Roasted Red Pepper and Smoked Gouda soup fits in perfectly!
Don’t let the ingredients stop you from trying this soup! Have you ever tried roasted red peppers? Oh my! They are easy to find at the supermarket, usually with the pickles (they come in a jar). Don’t be afraid to ask someone for help if you can’t find them. They are rich in vitamin C and add a depth of flavor to this soup. I like to add roasted red peppers to salads chopped up with leftover chicken for a low carb chicken salad. They are that good!
Now let’s talk about the smoked gouda. I can’t imagine this soup without it. I was a little hesitant the first time I made it for two reasons 1) Can I find it and 2) How will it taste? It was super easy to find! I was really surprised. I do a lot of my grocery shopping at our local Aldi (Who’s with me??? Raise your hand!) and found it there. I also checked a couple other stores, and they carried it as well. The taste is a little smoky and adds a creamy texture to the soup. It comes in a block, and I use a handheld box grater for this cheese gem.
